We will have just enough food if the squirrels are hungry or it’s a terrible year. That is the delight and challenge of producing ripe, delicious garden tomatoes! The squirrels are stylish. 

The wealth of the warm season not only spoils us but also allows garden species and birds to enjoy the fruit in all its splendor.

We Adore White Peaches!

However, it’s never easy to keep pace with the fruit when referring to our white peaches. One of those delicacies that always decides to mature at just the correct moment is peaches. 

The challenge is to consume them quickly enough to prevent the fruit from being harmed by possums and gravity. 

Summer peaches are annoying because they constantly decide to hold a communal ripening festival and manage to plan their “drops” in just a few days. It would be such a horrible loss to see them decay to the ground, so we’re racing to grab them ahead of their fall. 

We thus began to combine peaches in salads with tomatoes to keep consuming several peach dishes consecutively.

The Ingredients

To set up this delicious and easy summer salad, you’ll need:

  • Medium Tomatoes
  • Goat Cheese or Feta Cheese
  • Kosher Salt
  • Olive oil or Grape Seed Oil
  • Fresh Lemon Juice
  • Fresh or Dried Thyme
  • Vinegar
  • Black Pepper

Steps To Prepare The Peach Tomato Salad

  • Mix the salad dressing components (oil, lemon zest, vinegar, thyme, Kosher salt, and peppers) well in a jar or medium-sized bowl. 

Taste the coating. To complete the vinaigrette, add any more spices now if desired. Keep chilled until the moment of dressing the salad, just before presenting.

  • Make a small incision in the outermost layer of the peaches and simmer them for a little period, perhaps half a minute, if you like the skin off (Instasty enjoys certain types with the skin on and a few not so well).
